Côtes du Rhône A.O.C.

This is a high-calibre Côtes du Rhône, produced partly from young vines in the Vacqueyras terroir. Grenache and Syrah express their qualities of finesse and fruitiness. A supple, harmonious wine, intended for drinking from its early years.

VARIETIES

The mix comprises 50% Grenache for its roundness and finesse, 20-25% Syrah for structure, and 30% Mourvèdre for power and aromatic persistence. For rosé, the notion of fruitiness is key: the selected grapes therefore come from hot sites with light soils, conducive to finesse, rather than from calcareous-clay soils that generate more structure than aroma.

VINIFICATION

The main criterion is stringent control of temperature, which must never exceed 20°C. Frequent débourbage prevents the appearance of compounds with over-heavy flavours and safeguards the subtle aromas of the grapes. Malolactic fermentation is triggered as soon as alcoholic fermentation ends, and the coolness of our underground maturing cellars is essential for the ionic stabilisation of this rosé, which can go to market as early as January.

GOURMET MATCHMAKING

This Côtes du Rhône rosé is a essentially a summer wine. Subtle, balanced and fresh, it makes a delightful partner for vegetables and cold starters.In Provence, we also serve it with a nice aioli or tapenade, and any dish with pungently herby garrigue scents.
